- 2 ripe mangoes (or 2 cups mango puree)
- 1 can (400ml) full-fat coconut milk (chilled)
- 1/2 cup (120ml) sweetened condensed milk (or maple syrup for vegan)
- 1 tsp vanilla extract
- Optional: shredded coconut or mango chunks for topping
🍴 Steps
- Blend the base
- In a blender, combine chopped mango, chilled coconut milk, condensed milk, and vanilla.
- Blend until completely smooth and creamy.
- Freeze
- Pour into a loaf pan or container.
- Top with coconut shreds or mango cubes (optional).
- Cover with plastic wrap and freeze for at least 6 hours or overnight.
- Serve
- Let it sit at room temp for 5–10 min before scooping.
