Strawberry Cheesecake Ice Cream

Ingredients:

  • 2 cups (480 ml) heavy whipping cream (cold)
  • 1 can (14 oz / 400 g) sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese (softened)
  • 1 cup fresh strawberries (chopped)
  • 1/4 cup sugar (for strawberries)
  • 1/2 cup crushed graham crackers (optional)

👩‍🍳 Instructions:

  1. Cook the Strawberries
    In a small saucepan, cook the chopped strawberries with sugar over medium heat for 5–7 minutes, until jammy. Let it cool completely.
  2. Whip the Cream
    In a large bowl, whip cold heavy cream until stiff peaks form.
  3. Blend Cream Cheese Base
    In a separate bowl, beat the softened cream cheese until smooth. Add sweetened condensed milk and vanilla, and mix until well combined.
  4. Combine
    Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  5. Layer It
    In a freezer-safe container, layer the ice cream mixture with swirls of the strawberry compote and crushed graham crackers.
  6. Freeze
    Cover and freeze for at least 6 hours or overnight. Scoop and serve with extra strawberry sauce on top!
