Pistachio Ice Cream

Ingredients:

  • 2 cups (480 ml) heavy whipping cream (cold)
  • 1 can (14 oz / 400 g) sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional, enhances pistachio flavor)
  • 1/2 cup pistachio paste or spread (available online or homemade)
  • 1/2 cup roasted unsalted pistachios (roughly chopped)

  1. Whip the Cream
    In a large bowl, whip cold heavy cream until stiff peaks form.
  2. Prepare Base
    In another bowl, mix sweetened condensed milk, pistachio paste, vanilla extract, and almond extract if using. Stir until smooth.
  3. Combine
    Gently fold the whipped cream into the pistachio mixture until fully combined and creamy.
  4. Add Pistachios
    Fold in the chopped roasted pistachios.
  5. Freeze
    Pour into a container, top with extra pistachios, cover, and freeze for at least 6 hours or overnight.
