Peach Ice Cream Bars

Ingredients (makes about 6 bars):

  • 1 cup heavy whipping cream
  • ½ tsp vanilla extract (optional)
  • 1 ripe peach (pitted & chopped)
  • ¾ cup sweetened condensed milk
  • ¾ cup white chocolate (bars or chips)
  • 1 Tbsp coconut oil
  • 1 Tbsp freeze‑dried strawberry powder (for that peachy blush)

Steps:

  1. Whip cream (and vanilla) to stiff peaks.
  2. Blend peach and condensed milk into smooth puree.
  3. Fold peach puree into whipped cream gently until combined.
  4. Spoon mix into peach‑shaped silicone molds, insert sticks, and freeze 6h+ or overnight.
  5. Gently unmold frozen bars. Melt white chocolate with coconut oil.
  6. Dip bars in chocolate, letting it drip off evenly.
  7. Sprinkle tops with strawberry powder for natural blush.
  8. Freeze briefly again or serve right away!
