- 4 ripe bananas (peeled and frozen in chunks)
- 1/2 cup full-fat coconut milk (chilled)
- 1 tsp vanilla extract
- Optional: shredded coconut or maple syrup for extra sweetness
🍴 Steps
- Freeze your bananas
- Peel and slice ripe bananas, freeze them until solid (minimum 4 hours or overnight).
- Blend it up
- In a high-powered blender or food processor, blend the frozen bananas, coconut milk, and vanilla.
- Blend until smooth and creamy (add more coconut milk if needed).
- Optional: mix in shredded coconut or sweetener.
- Freeze for scoopable texture
- Eat immediately as soft serve OR
- Pour into a container and freeze for 1–2 hours for scoopable ice cream.
- Serve & top
- Scoop and top with toasted coconut, banana slices, or even chocolate chips!
