Strawberry Shortcake Ice Cream Bars

📝 Ingredients (makes ~8 bars)

For the ice cream base:

  • 2 cups (480ml) heavy whipping cream
  • 1 can (397g) sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped fresh strawberries
  • 1–2 tbsp strawberry jam

For the strawberry shortcake crumble:

  • 8 Golden Oreos
  • 4 Strawberry Oreos (or regular + 1 tbsp strawberry gelatin powder)
  • 1 tbsp melted butter

🍴 Steps

  1. Make the crumble
    • Crush both types of Oreos (separately)
    • Mix them together with melted butter to form a crumb topping. Set aside.
  2. Make the base
    • Whip heavy cream to stiff peaks.
    • In a separate bowl, mix condensed milk, vanilla, strawberries, and jam.
    • Gently fold the whipped cream into this mixture.
  3. Assemble
    • Pour into a lined loaf pan.
    • Sprinkle the strawberry shortcake crumble generously on top.
    • Freeze 6–8 hours or overnight.
  4. Cut into bars
    • Slice into rectangles and enjoy like a real shortcake bar!
